Fidel Huancas, a third-generation coffee farmer from La Unión, Cajamarca, Peru, has exceptional coffees currently featured by specialty roasters across the US and Europe.

Fidel manages the Shipal and El Pajurillo farms that are between 1,800 and 1,900 meters above sea level, cultivating several varieties, which include Catimor, Yellow Caturra, and Red and Yellow Bourbon. Fidel follows a highly technical and meticulous process of manual picking, defect removal through floating and a two-stage fermentation process in bags before washing.

This offering is a washed Caturra with dried fig and brown sugar sweetness and lemon zest brightness. Cheers!
