Lion's Mane is a rotating line of the tastiest espresso we can get our hands on. Reserved for smaller, espresso-forward drinks in our cafes, Lion's Mane is great with a little milk or straight up!
Currently, Lion's Mane is a banger delivered to us by the Guatemalan master producer Maria Eugenia at Finca la Senda. The farm is nestled in the hills of Acatenango region, with a stunning front row view of the active volcano Fuego. Staunchly dedicated to quality, Maria has developed fermenting processes that are complex and incredibly well documented. She and daughter Yancy are equally staunchly dedicated to community. They refuse to produce washed coffees in order to conserve water for people rather than goods to be exported. They provide coffee pickers with shelter and food, in addition to competitive wages. The net effect of all this care is exceptional coffees that are leading the way on sustainability.
This coffee is a Pache anaerobic natural fermented with champagne yeast. We're loving the earnest vanilla, sparkling apple sweetness, and the deep winey complexity. We hope you enjoy it too!
