Lion's Mane is a rotating line of the tastiest espresso we can get our hands on. Reserved for smaller, espresso-forward drinks in our cafes, Lion's Mane is great with a little milk or straight up!
Felipe Trujillo is a pillar of his coffee community and a fourth-generation producer. Finca La Ventolera, named after the fragrant winds that blow through the farm, is nestled up high on Morro Plancho, an incredibly scenic mountain top. Each coffee plant is grown with purpose and intention, and crafted with deep traditional farming techniques and experimental processing.
Optimal conditions are met when the cherries are hand-picked by farmers who literally cherry-pick the ripest fruit from each bush. This is how the producer preserves a consistent quality of flavor, providing more quality and guaranteed sweetness. Though La Ventolera uses many specialized yeasts and fermentation techniques, this particular yellow Castillo is naturally fermented. A process where whole coffee cherries are allowed to dry with the fruit still intact, facilitating the growth of indigenous bacteria and yeasts that disintegrate naturally occurring sugars.
