This is how the producer preserves consistent flavor profiles, providing higher quality and guaranteed sweetness. Though La Ventolera farm uses many specialized yeasts and fermentation protocols, this particular yellow Castillo or, \"Yellow Colombia\" as they call it, is naturally fermented.
